Break the eggs and reserve the yolks in a glass. Put the whites in a bowl and raise them up to the point of snow - fluffy and firm appearance. Then add the sugar and stir well. Then add the almond and when it is well mixed, add the yolks. Put all the mixture into a mould and cover with paper towels. Put it in the oven for about 45 minutes. When it is cold, blow it up and sweeten it on top with ground sugar.
TIP: the sugar in the mixture should not be noticed.
