Lamb 'Tombet


  • 3 kg. of lamb or kid meat.
  • 4 leaves of laurel.
  • 2 onions.
  • 2 kg. of potatoes.
  • 1 head of garlic.
  • 1 small glass of cognac.
  • 1 big spoonful of sweet paprika.
  • 2 tomatoes.
  • Olive oil.
  • Salt.
  • Thyme.
  • Parsley.
  • 12 almonds.
  • 1 slice of fried bread.


In a clay pot, blanch the onion cut in four pieces. Then add half a head of garlic, the tomato and the sweet paprika; then the chopped meat, the laurel and the thyme.
Turn it over a few times, and after a while add enough water to cover the meat, and then the cognac.
Cover the pot and leave to simmer for an hour.
Then put the potatoes in pieces and continue cooking until everything is very tender.
Ten minutes before serving, add a mash to the stew, of almonds, fried bread, parsley and the other half of the head of garlic.
